  • 2 tablespoons olive oil
  • 1/2 lb chicken (boneless and skinless thighs preferred, chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 4 roma tomatoes (chopped)
  • 1/4 cup fresh basil leaves (chopped)
  • 8 oz spinach (fresh)
  • 3 garlic cloves (chopped)
  • 8 oz spaghetti pasta

Instructions

  1. Heat a large skillet over medium-low heat and add sun-dried tomatoes with olive oil.
  2. Add chopped chicken and season with salt and red pepper flakes; cook until no longer pink (about 5 minutes).
  3. Stir in chopped tomatoes, basil, spinach, and garlic; cook for another 3–5 minutes until spinach wilts.
  4. Meanwhile, cook spaghetti according to package instructions until al dente; drain.
  5. Combine the drained spaghetti with the chicken mixture in the skillet; mix well over low heat.
