  • ½ teaspoon salt
  • 1½ cups potato starch
  • ½ cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons gochugaru (chili flakes)
  • 2 tablespoons minced garlic
  • 3 tablespoons neutral oil (like avocado or sunflower)
  • ⅓ cup chopped cilantro

Instructions

  1. Boil the peeled and cut potatoes in salted water until fork-tender (10–15 minutes). Drain and mash until smooth.
  2. Mix in the potato starch and gradually add warm water to create a pliable dough.
  3. Roll the dough into thin noodle shapes and boil in batches until they float (about 3–4 minutes). Transfer to cold water to cool.
  4. Prepare chili oil by heating oil until smoking and pouring it over a mixture of gochugaru, garlic, soy sauce, and vinegar.
  5. Toss cooled noodles with chili oil and chopped cilantro before serving.
