  • 1 tbsp Olive oil
  • 1 small Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken broth (reduced sodium)
  • 1/2 cup Heavy cream
  • 1 4-oz can Green chiles (diced; drained)
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Sea salt (to taste)
  • 1/2 tsp Black pepper (to taste)
  • 8 oz Cream cheese (at room temperature, cut into small pieces)
  • 1 cup Mexican blend cheese (shredded)
  • 4 cups Shredded chicken

Instructions

  1. In a Dutch oven, heat olive oil over medium heat. Sauté diced onion for 5–7 minutes until soft.
  2. Add minced garlic and sauté for 1–2 minutes until fragrant.
  3. Stir in chicken broth, heavy cream, green chiles, cumin, oregano, cayenne pepper, sea salt, and black pepper. Bring to a boil then reduce heat to medium and simmer for 40 minutes.
  4. Lower the heat and mix in cream cheese and shredded Mexican blend cheese until melted.
  5. Add shredded chicken and simmer for another 5 minutes until heated through. Taste and adjust seasoning as needed.
