  • 1 tbsp butter
  • 2 mushrooms, sliced
  • Handful of spinach
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Pinch salt
  • 1 frozen paratha
  • 1 egg
  • 1 tbsp mango chutney
  • 1 tbsp grated cheese (cheddar and mozzarella mix)

Instructions

  1. Melt butter in a non-stick frying pan over medium heat. Add sliced mushrooms and sauté for 3 minutes. Stir in spinach until wilted.
  2. Season with cumin seeds, turmeric powder, chili powder, and salt. Remove from pan.
  3. Cook frozen paratha in the same pan until golden brown according to package instructions.
  4. Whisk the egg in a bowl and pour it into the pan to form an omelette. Place the cooked paratha on top of the uncooked side and press gently.
  5. Flip carefully using a spatula; cook for another minute until fully cooked.
  6. Spread mango chutney over the omelette side, add veggies and cheese before folding.
  7. Serve warm and enjoy!
