Ingredients

  • Olive oil
  • Yellow onion
  • Garlic
  • Low-sodium chicken broth
  • Diced green chilies
  • Ground cumin
  • Cayenne pepper
  • Dried oregano
  • Paprika
  • Lime juice
  • Great northern beans
  • Sour cream or Greek yogurt
  • Corn
  • Cooked chicken (shredded)
  • Optional toppings: cilantro, shredded cheese, avocado slices, tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion until softened, about 3–5 minutes. Add minced garlic and cook for another 30 seconds.

  3. Blend half of the beans with some broth until smooth (optional) and add both whole and pureed beans along with corn to the pot.
  4. Simmer uncovered for 15–30 minutes until heated through.
  5. Stir in sour cream and shredded chicken until combined.
