  • 2 tablespoons instant espresso powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt; set aside.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and vanilla extract.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and bake for about 12 minutes until edges are lightly golden.
  6. For the topping, whip together mascarpone cheese, whipping cream, powdered sugar, and vanilla until soft peaks form.
