  • 115 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 50 g brown sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 200 g mascarpone cheese
  • 100 g whipping cream
  • 50 g powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, espresso powder, baking powder, baking soda, and salt.
  3. Cream softened butter with granulated and brown sugars until light and fluffy. Add egg and vanilla; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. Scoop dough onto prepared baking sheet, leaving space between cookies. Bake for about 12 minutes until edges are golden.
  6. Cool before topping: whip mascarpone with cream, powdered sugar, and vanilla until smooth; dollop onto cookies and dust with cocoa.
