  • 20 gyozas (or potstickers)
  • 1 tbsp vegetable oil
  • 4 garlic cloves, grated
  • 1 tsp grated ginger
  • 4 cups chicken broth
  • 14 oz unsweetened coconut milk (full fat)
  • 1 tbsp low sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp toasted sesame oil
  • 3 tbsp Thai red curry paste
  • 1 tsp brown sugar
  • 2 tbsp lime juice

Instructions

  1. Bring a large saucepan of salted water to boil.
  2. In a separate large pot, heat oil over medium and sauté grated garlic and ginger until fragrant (about 30 seconds).
  3. Add chicken broth and coconut milk; stir in soy sauce, fish sauce, sesame oil, brown sugar, red curry paste, and lime juice. Bring to a boil and simmer for 5 minutes.
  4. Cook gyozas in boiling water according to package instructions (about 2-3 minutes). Drain well.
  5. Divide gyozas into bowls and ladle hot soup over them. Top with chives or extra veggies if desired.
