  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans (15 oz)
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges

Instructions

  1. Cook the rice: Bring water or chicken broth to a boil in a large pot. Add rice, cover, reduce heat to low, and simmer for about 18 minutes until water is absorbed.
  2. Brown the meat: In a skillet over medium heat, heat olive oil. Add ground beef or turkey; cook until browned. Stir in taco seasoning as per package instructions.
  3. Combine filling ingredients: Add black beans, corn, and diced tomatoes to the skillet; mix well until warmed through.
  4. Assemble: Fluff rice and divide it among serving bowls. Top with the meat mixture, followed by shredded lettuce and cheese.
