  2. Separate egg yolks from whites; whip egg whites until stiff peaks form.
  3. In another bowl, cream egg yolks with monkfruit sweetener and vanilla until fluffy.
  4. Mix in Greek yogurt until well combined, then sift in cornstarch.
  5. Gently fold whipped egg whites into the yogurt mixture without deflating them.
  6. Pour batter into the prepared dish, set it in a larger baking sheet with boiling water for moisture, and bake for 45 minutes at 330°F, then increase temperature to 350°F (180°C) for an additional 15 minutes.
  7. Allow the cake to cool gradually in the oven before serving.
