  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, minced
  • 2 serrano peppers, minced
  • 1 can (13.5 ounces) full-fat coconut milk
  • 1 can (14 ounces) crushed tomatoes
  • 1 tsp ground cumin
  • 1 tsp cayenne pepper
  • ½ tsp ground coriander
  • 2 tsp curry powder
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp kosher salt
  • 1 tsp freshly cracked black pepper
  • 1 tbsp lemon juice
  • ½ cup fresh cilantro for garnish

Instructions

  1. Rinse lentils under cold water until clear; soak overnight if desired.
  2. Heat oil in a large deep skillet over medium-high heat. Sauté garlic, ginger, and serrano peppers for about 3 minutes.
  3. Stir in spices and cook for an additional 30–60 seconds until fragrant.
  4. Add rinsed lentils, coconut milk, and crushed tomatoes; mix well. Cover partially and simmer on low for 20-25 minutes or until lentils are tender.
  5. Stir in lemon juice and adjust salt if necessary before serving hot with rice or flatbread.
