  • 3 tbsp toasted sesame oil
  • 4 garlic cloves (grated)
  • 1 tbsp freshly grated ginger
  • 3.5 ounces shiitake mushrooms (torn)
  • 4 cups chicken broth (or vegetable)
  • ½ tsp ground turmeric
  • 2 tbsp low sodium soy sauce
  • 1 can (14 oz) unsweetened coconut milk
  • 9 ounces instant ramen noodles
  • Toppings: chili oil, sesame seeds, chopped chives, boiled eggs

Instructions

  1. Prep ingredients by grating garlic and ginger and tearing shiitakes.
  2. In a large pot, heat 1 tablespoon sesame oil and sauté shiitakes until brown; set aside.
  3. Add remaining sesame oil, garlic, and ginger to the pot; cook until fragrant.
  4. Deglaze with chicken broth and bring to a boil. Stir in turmeric, soy sauce, coconut milk, and simmer.
  5. Add ramen noodles; cook for about 2 minutes until tender.
