  • 1 and 1/3 cups granulated sugar
  • 1/3 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for coating)
  • 1 and 1/2 tablespoons cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a large bowl or stand mixer, beat softened butter until creamy, then add sugars and mix until fluffy. Incorporate eggs and vanilla until well combined.
  3. In another bowl, whisk together flour, baking soda, salt, and cream of tartar. Gradually mix dry ingredients into the wet ingredients until just combined.
  4. Scoop out dough balls (about 1.5 inches) and roll in a mixture of granulated sugar and cinnamon until fully coated.
  5. Place on prepared baking sheets with space in between. Bake for about 9-11 minutes until edges are set but centers are still shiny.
  6. Cool on the pan for a few minutes before transferring to a wire rack.
