  • 1 large red onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 cup kalamata olives
  • 1 can (14 oz) diced tomatoes
  • ½ cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Dried oregano
  • Dried thyme
  • Dried rosemary
  • Red pepper flakes

Instructions

  1. Season chicken thighs with salt and black pepper.
  2. Layer half the onions, minced garlic, and both bell peppers in the slow cooker. Place seasoned chicken on top.
  3. Add remaining onions, peppers, olives, diced tomatoes, and sprinkle herbs over the chicken.
  4. Pour chicken broth and lemon juice over all ingredients.
  5. Cover and cook on low for 7-8 hours or high for 4 hours until the chicken is fork-tender.
