  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt. Form into four oval patties.
  2. Heat oil in a cast iron skillet and brown the patties for 2-3 minutes on each side. Remove and keep warm.
  3. In the same skillet, cook onions until translucent; add mushrooms and cook until softened. Stir in thyme and garlic powder.
  4. Gradually add beef stock while scraping up brown bits from the pan; bring to a boil. Stir in Worcestershire sauce and butter; season with salt and pepper.
  5. Return patties to the pan and simmer in gravy for 5-7 minutes until cooked through.
  6. Serve garnished with fresh parsley or chives.
