  • 4 garlic cloves (minced)
  • 1 teaspoon salt (divided)
  • 4 cups vegetable broth
  • 4 large potatoes (peeled and cut into chunks)
  • 1 large head of roasted garlic
  • 1 tablespoon fresh parsley (chopped)
  • 1/4 teaspoon freshly ground pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until softened, about 8 minutes. Stir in minced garlic and cook for another minute until fragrant.
  2. Pour in vegetable broth and bring to a boil. Add potato chunks, parsley, remaining salt, and pepper, then bring back to a boil before reducing heat.
  3. Simmer until potatoes are tender, about 15–20 minutes. Stir in roasted garlic cloves, smashing them to your preference.
