  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste
  • 1 teaspoon red chili flakes
  • 5 garlic cloves, minced
  • 1/4 cup fresh basil
  • kosher salt
  • black pepper

Instructions

  1. Heat a large pot over medium heat. Sauté chopped onion until translucent (3-4 minutes).
  2. Stir in minced garlic and sun-dried tomatoes; cook for an additional minute.
  3. Pour in chicken stock and tomato paste; add chili flakes, salt, and pepper. Stir well.
  4. Add paneer pasta and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes until the pasta is cooked through.
  5. Mix in heavy whipping cream and fresh spinach; cook for another 2-3 minutes until spinach wilts.
  6. Serve hot, garnished with freshly shredded parmesan cheese and basil.
