  • 1 ½ pounds boneless, skinless chicken breasts
  • 8 ounces dry orzo
  • 2 cups chopped fresh asparagus
  • 2 cups fresh spinach
  • 2 ½ cups low sodium chicken broth
  • ⅓ cup half and half
  • ⅓ cup freshly grated parmesan cheese
  • Olive oil
  • Garlic powder
  • Minced garlic
  • Onion
  • Thyme
  • Salt
  • Black pepper
  • Red pepper flakes

Instructions

  1. In a small bowl, combine chicken with garlic powder, salt, black pepper, and red pepper flakes. Toss to coat.
  2. Heat olive oil in a large pan over medium-high heat. Add seasoned chicken and cook until browned on all sides (10–12 minutes). Remove and set aside.
  3. In the same pan, add more olive oil and sauté asparagus for about 2 minutes until tender but crisp. Set aside with chicken.
  4. Add diced onion to the pan and sauté until softened (about 3 minutes). Stir in dry orzo and minced garlic; cook for another 3 minutes.
  5. Pour in chicken broth and bring to a simmer. Cover and cook for about 7 minutes until most liquid is absorbed.
  6. Stir in cooked chicken, asparagus, half and half, parmesan cheese, spinach, and thyme. Heat for an additional minute or two.
  7. Garnish with chopped parsley and extra parmesan before serving.
