  • 1¼ cups cake flour (for strawberry layer)
  • ¾ cup dutch process cocoa powder
  • 8 oz fresh strawberries
  • 3 cups unsalted butter (for frosting)
  • 6 eggs (whites only)
  • ½ cup buttermilk
  • 6 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare three 8-inch cake pans.
  2. For the chocolate layer: Melt chocolate with cocoa and hot coffee. Mix dry ingredients separately. Combine all ingredients and pour into prepared pans.
  3. For the strawberry layer: Blend strawberries into a puree. Cream butter and sugar; add egg whites one by one. Alternate mixing dry ingredients with milk and strawberry puree.
  4. Bake each layer for about 25–30 minutes until a toothpick comes out clean. Cool on wire racks.
  5. Prepare the vanilla layer similarly to the other layers using specified ingredients.
  6. Assemble the cooled layers, frosting between each layer and around the cake.
