  • 9 lasagna noodles
  • 1 pound mushrooms, sliced (cremini or button)
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups fresh spinach leaves, chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Dried thyme, salt, and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles in boiling salted water for about 8–10 minutes; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and cook for another minute.
  4. Stir in mushrooms with thyme, salt, and pepper; cook until tender. Add spinach and cook until wilted.
  5. Assemble the lasagna by layering marinara sauce, noodles, ricotta cheese, mushroom mixture, and shredded cheeses in the baking dish.
  6. Repeat layers until all ingredients are used up, finishing with marinara sauce on top.
  7. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10–15 minutes until bubbly.
