Ingredients

  • Boneless, skinless chicken breasts
  • Medium zucchini
  • Olive oil
  • Fresh garlic
  • Lemon juice and zest
  • Oregano, basil, thyme (fresh or dried)
  • Parmesan or feta cheese
  • Salt and pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Season chicken breasts with salt, pepper, and half of the herbs. Optionally pound them for even cooking.
  3. Slice zucchini and toss with olive oil, minced garlic, lemon juice, zest, remaining herbs, salt, and pepper in a bowl.
  4. Layer seasoned chicken in the baking dish and arrange zucchini around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Add cheese in the last 5 minutes if desired.
  6. Let rest for 5-10 minutes before slicing and serving.
