  • 2 tablespoons confectioner's sugar
  • 1 cup lemon curd
  • 1 tablespoon lemon zest
  • Pinch of salt

Instructions

  1. In a large mixing bowl, whip the heavy cream, confectioner's sugar, and a pinch of salt using a hand mixer or stand mixer until medium peaks form (about 2-3 minutes).
  2. Gently fold in the lemon curd and lemon zest until well combined, being careful not to overmix.
  3. Divide the mousse into 8 small dessert glasses (approximately 1/2 cup each) and optionally garnish with whipped cream or additional lemon zest.
  4. Refrigerate for at least 1 hour before serving to allow the mousse to chill and firm up.
