  • 1 cup unsalted butter, melted
  • 1 large egg (US), room temperature
  • 1 large egg yolk (US), room temperature
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • ¼ cup granulated sugar for rolling (optional)

Instructions

  1. Preheat the oven to 375 F (190 C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the melted butter and sugar until smooth. Add egg and lemon zest.
  3. In another bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in blueberries gently.
  6. Using a cookie scoop, portion dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes until edges are lightly golden.
