  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1 tsp dried oregano
  • 1 egg
  • 1 cup Greek yogurt (preferably full-fat)
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, red onion, garlic, parsley, mint, oregano, salt and pepper; add egg and mix gently until just combined.
  2. Shape into 20 meatballs (1 to 1.5 inches in size).
  3. Heat olive oil in a skillet over medium heat; cook meatballs for about 4-5 minutes per side until golden brown and cooked through (165°F internal temperature).
  4. For tzatziki: mix Greek yogurt, grated cucumber (excess water squeezed out), garlic, lemon juice, olive oil, dill, salt and pepper in a bowl; chill for at least 15 minutes before serving.
  5. Serve meatballs with tzatziki sauce.
