  • 4 pounds bone-in chicken thighs or drumsticks
  • 2 teaspoons chicken bouillon
  • ¼ cup chopped scallions
  • 2 habanero peppers (seeded and minced)
  • 2 tablespoons minced garlic
  • 1 large onion (chopped)
  • 3 tablespoons oil
  • 4 cups water
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • 1 large carrot (sliced)
  • 1 bell pepper (seeded and chopped)
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon browning seasoning
  • 2 bay leaves

Instructions

  1. Rinse and pat dry the chicken pieces.
  2. Marinate chicken with chicken bouillon, scallions, habanero peppers, garlic, thyme, ginger, smoked paprika, and black pepper for at least 30 minutes.
  3. Heat oil in a large pot over medium-high heat; brown the marinated chicken on each side for about 5–7 minutes.
  4. Sauté onions, carrots, and bell pepper in the same pot until softened.
  5. Return chicken to pot; add ketchup, brown sugar, browning seasoning, bay leaves, and water. Stir well.
  6. Bring to a boil; reduce heat to low and simmer for about 50 minutes until chicken is tender.
