  • 4 boneless, skinless chicken breasts
  • 1 cup crumbled feta cheese
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In a mixing bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish; pour marinade over it. Seal or cover and refrigerate for 30 minutes to 4 hours.
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade; discard marinade. Place chicken in a baking dish.
  4. Spoon feta mixture over each chicken breast.
  5. Bake for 25 to 30 minutes until the internal temperature reaches 165°F (75°C). Broil for an additional 2–3 minutes if desired for extra color.
  6. Allow chicken to rest for about 5 minutes before serving with greens or roasted vegetables.
