  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups sharp cheddar cheese

Instructions

  1. Peel and cube the Yukon Gold potatoes into ½-inch pieces; rinse under cold water.
  2. In a large pot over medium heat, melt butter (or olive oil). Sauté chopped onion until soft.
  3. Add minced garlic and cook until fragrant.
  4. Sprinkle flour over the mixture; stir to form a roux for about 2 minutes.
  5. Gradually whisk in the broth, scrape the bottom of the pot, and bring to a simmer.
