  • 1 tsp vanilla extract
  • ½ cup pure maple syrup
  • ¾ cup freshly grated carrots

  2. In another bowl, combine melted coconut oil or butter with egg and vanilla. Stir in maple syrup until fully combined.
  3. Mix the dry ingredients into the wet mixture until just incorporated. Fold in grated carrots.
  4. Chill the dough for at least 30 minutes.
  5. Preheat oven to 325°F and line a baking sheet with parchment paper.
  6. Scoop rounded tablespoons of dough onto the baking sheet and flatten slightly.
