  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons rice vinegar
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 tablespoons vegetable oil
  • Garnish: green onions (sliced), sesame seeds

Instructions

  1. Cut chicken into bite-sized pieces and place in a large bowl.
  2. In a separate bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, garlic, and ginger until the sugar dissolves.
  3. Pour half of the marinade over the chicken and marinate for at least 30 minutes.
  4. Heat oil in a skillet over medium-high heat. Cook the marinated chicken for 6-8 minutes until golden and cooked through.
  5. For the sauce, mix cornstarch with water to create a slurry. Add remaining marinade to the pan and bring to a simmer; stir in the slurry until thickened.
  6. Serve garnished with green onions and sesame seeds.
