  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Sea salt and ground black pepper to taste

Instructions

  1. Heat a large cast iron skillet over medium heat; add olive oil and two tablespoons of ghee.
  2. Once melted, add potatoes and season with garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes until golden brown.
  3. Remove the potatoes from the skillet. Increase heat to medium-high, add remaining ghee, then add seasoned steak bites. Sear for about 2 minutes without stirring until browned; stir occasionally until cooked through.
  4. Return potatoes to the skillet and mix well. Taste and adjust seasoning if needed. Serve hot.
