  • 1.4 lb boneless, skinless chicken breasts (sliced)
  • 1.4 lb small yellow potatoes (quartered)
  • 3 tablespoons butter (divided)
  • 5 garlic cloves (minced)
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh oregano
  • 1 tablespoon olive oil
  • 1/4 cup low-sodium soy sauce (or coconut aminos)
  • 1 tablespoon hot sauce (such as Sriracha)
  • Salt and freshly ground black pepper

Instructions

  1. Marinate the chicken in soy sauce, hot sauce, olive oil, and black pepper for at least 15 minutes.
  2. Boil quartered potatoes in salted water for about 8 minutes until slightly tender; drain.
  3. In a skillet, heat olive oil and 1 tablespoon of butter over medium heat. Sear the potatoes until golden brown for about 8–9 minutes; set aside.
  4. In the same skillet, melt remaining butter and add marinated chicken along with minced garlic. Cook until golden brown.
  5. Stir in leftover marinade and fresh herbs; return crispy potatoes to the skillet. Toss gently to coat.
  6. Serve garnished with additional herbs or chili flakes if desired.
