  • 56 g butter
  • 2 eggs
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) for fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla.
  3. In another bowl, whip eggs and sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; mix in chocolate chips.
  5. Fold melted chocolate into the egg mixture gently, then incorporate dry ingredients without overmixing.
  6. Scoop tablespoons of batter onto the prepared tray; bake for 12-14 minutes until set with crackly tops.
