  • ½ cup granulated sugar
  • 2 cups Fruity PEBBLES cereal (divided)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 8 large marshmallows

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, cream together softened butter, sugar, and ½ cup of Fruity PEBBLES until fluffy. Add egg and vanilla; mix well.
  3. In another bowl, combine flour, baking soda, and salt. Gradually add to wet ingredients until just mixed. Fold in an additional cup of Fruity PEBBLES.
  4. Scoop dough (about 3-4 tablespoons), flatten slightly, place a marshmallow in the center, and wrap the dough around it. Roll in remaining cereal.
  5. Space cookies on a baking sheet and bake for 8–11 minutes until marshmallows peek through cracks. Cool before transferring to a wire rack.
