  • 1/2 cup packed brown sugar, light or dark
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon white vinegar
  • 1 to 2 teaspoons red liquid-gel food coloring
  • 3 ounces cream cheese
  • 6 tablespoons unsalted butter, softened to room temperature
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 and 1/2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, milk powder, and cornstarch.
  3. In another bowl, cream together softened butter and sugars until smooth. Add egg, vanilla extract, white vinegar, and red food coloring; mix well.
  4. Fold dry ingredients into the wet mixture until combined into a sticky dough.
  5. Using a cookie scoop, place dough onto prepared baking sheets spacing them about three inches apart.
  6. Bake for 12 to 15 minutes until puffed and edges are slightly golden; allow cooling on the baking sheet before transferring to a rack.
  7. For frosting: Beat cream cheese and butter until smooth; add vanilla extract and powdered sugar until well combined. Frost cooled cookies as desired.
