  • 300 g cavatappi macaroni
  • 5 thinly sliced onions
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup beef broth
  • 1/2 baguette (for topping)
  • Olive oil (for sautéing)
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg
  • 1 tbsp flour + 3 tbsp water (for béchamel)
  • 1 tsp sugar
  • Fresh parsley (chopped)

Instructions

  1. Slice onions into long strips.
  2. In a large skillet, heat olive oil over medium heat and sauté onions for 30–40 minutes until caramelized. Add beef broth if sticking occurs.
  3. In the same skillet, prepare a béchamel sauce by whisking flour into melted butter, then gradually adding heavy cream until thickened.
  4. Combine ⅔ of the caramelized onions with the béchamel sauce and season to taste.
  5. Cook pasta in salted boiling water until just shy of al dente; drain and mix with the sauce.
  6. Transfer to a baking dish, topping with remaining onions and breadcrumbs from the baguette drizzled with olive oil.
  7. Bake at 350°F (175°C) for 10–15 minutes until golden.
