  • 1 1/2 lbs Yukon Gold potatoes (diced)
  • 1 lb ground Italian sausage
  • 6 pieces bacon (cooked and crumbled)
  • 5 cups chicken stock
  • 1 cup heavy whipping cream
  • 2 cups chopped fresh kale
  • 3 garlic cloves (minced)
  • 1 medium white onion (peeled and diced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large stockpot over medium-high heat, cook the ground Italian sausage until browned. Break it into small pieces as it cooks.
  2. Use a slotted spoon to transfer the cooked sausage to a plate, leaving about 1 tablespoon of grease in the pot. Discard excess grease.
  3. Add diced onion to the pot with reserved grease. Sauté for about 5 minutes until soft.
  4. Stir in minced garlic and sauté for an additional minute.
  5. Add diced potatoes, chicken stock, and cooked sausage back into the pot; bring to a simmer.
  6. Reduce heat to medium-low and let simmer for about 10 minutes or until potatoes are tender.
  7. Fold in chopped kale and heavy whipping cream; simmer for another 5 minutes. Season with salt and pepper to taste.
  8. Serve warm, garnished with crumbled bacon bits.
