  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast (or 2 ¼ teaspoons)
  • 4 ½ cups all-purpose flour
  • ¼ cup melted butter
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk mixed with 1 tablespoon water
  • Pretzel salt

  2. Add flour and melted butter; mix on low speed, then knead at medium speed for about 4–5 minutes until smooth.
  3. Place dough in an oiled bowl; cover and let rise in a warm place until doubled (50–55 minutes).
  4. Preheat oven to 450°F (232°C); line baking sheets with parchment paper.
  5. Boil water and baking soda in a large saucepan. Divide risen dough into eight pieces and shape into pretzels.
