  • 2 chicken breasts
  • 1 can black beans (15 oz)
  • 1 can corn (15.25 oz, undrained)
  • 1 can Rotel tomatoes (10 oz, undrained)
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 1 package light cream cheese (8 oz)

Instructions

  1. Drain and rinse the black beans.
  2. Place chicken breasts at the bottom of the slow cooker.
  3. Layer corn and Rotel tomatoes over the chicken.
  4. Add rinsed black beans on top, then sprinkle with seasoning mix.
  5. Place cream cheese on top of all ingredients.
  6. Cover and cook on low for 6-8 hours.
  7. Shred chicken after cooking and stir back into the chili before serving.
