  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups chicken or vegetable broth
  • 1 (14 ounce) can fire-roasted diced tomatoes (with juices)
  • 3 (14 ounce) cans black beans (drained & rinsed)
  • 1 (4 ounce) can diced green chilies (with juices)
  • 1/2 red bell pepper (chopped)
  • Chili powder
  • Smoked paprika
  • Ground cumin
  • Lime juice
  • Salt & pepper (to taste)

Instructions

  1. In a soup pot, heat olive oil over medium heat. Sauté the chopped onion for 5–7 minutes until lightly browned.
  2. Add minced garlic and stir for about a minute. Then pour in the broth, diced tomatoes, black beans, green chilies, and red bell pepper. Mix in the spices.
  3. Increase heat to high and bring the mixture to a boil. Cover slightly and reduce heat to simmer for 8–10 minutes.
  4. Blend the soup with an immersion blender until desired consistency is reached; leave some chunks if preferred.
  5. Stir in lime juice and season with salt and pepper to taste.
  6. Serve hot with optional toppings like cilantro, sour cream, tortilla strips, or avocado.
