  • 200 g dark chocolate (chopped)
  • 125 g butter (chopped)
  • 150 g caster sugar
  • 100 g light brown sugar
  • 2 medium eggs
  • 3 tablespoons cocoa powder
  • 130 g plain flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Sea salt for sprinkling (optional)

Instructions

  1. Preheat your oven to 160ºC (320ºF) for fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring until smooth.
  3. In another bowl, whisk together caster sugar, light brown sugar, and eggs until thick and fluffy.
  4. Gently mix the melted chocolate into the egg mixture until combined.
  5. Sift in cocoa powder, plain flour, baking powder, and salt; fold until just combined.
  6. Use an ice cream scoop to portion dough onto the tray, leaving space between each biscuit. Sprinkle sea salt if desired.
  7. Bake for about 12 minutes until edges are firm but centers are soft. Let cool for 10 minutes before transferring to a rack.
