  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract

  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • For the Icing: 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a blender, pulverize freeze-dried strawberries into fine powder.
  3. Cream together butter, sugar, and vanilla extract until light and fluffy; add the egg.
  4. Gradually mix in flour, baking soda, part of the strawberry powder, and salt.
  5. Stir in strawberry jam until well combined.
  6. Roll dough into balls (about 1 inch) and place on the prepared baking sheet.
  7. Bake for about 10 minutes or until lightly golden; tap baking sheet to flatten cookies halfway through.
  8. Prepare icing by combining cream cheese, powdered sugar, hot milk, remaining strawberry powder, and vanilla extract until smooth.
  9. Once cooled, dip or drizzle icing over cookies.
