  • 2 cups cooked and shredded chicken
  • 1 can (10 oz) red enchilada sauce
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • spices: cumin, chili powder, salt, pepper

Instructions

  1. Prepare the chicken by boiling or baking until cooked through; shred it once cooled.
  2. Sauté chopped onion and minced garlic in vegetable oil over medium heat until softened.
  3. Mix shredded chicken with sautéed onions, garlic, cumin, chili powder, salt, and pepper; heat through.
  4. Pour a small amount of enchilada sauce into a baking dish to prevent sticking.
  5. Roll the chicken mixture in tortillas and place seam-side down in the baking dish.
  6. Top rolled enchiladas with remaining enchilada sauce and cheese.
  7. Cover with foil and bake at 375°F (190°C) for 20–25 minutes; remove foil and bake an additional 5–10 minutes until bubbly.
