  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Mix in egg and vanilla extract until fully combined.
  4. Gradually add flour, salt, and baking powder; mix until just combined.
  5. Scoop out cookie dough onto the prepared baking sheet and flatten each ball slightly.
  6. Prepare the pecan pie filling by combining melted butter, brown sugar, pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt in a separate bowl.
