  • 1/2 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced or chopped)
  • 2 sticks celery (chopped finely)
  • 1 (28 ounce) can crushed tomatoes
  • 1 (14 ounce) can diced tomatoes
  • 4 cups chicken broth
  • 2 (9 ounce) packages refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Salt & pepper to taste

Instructions

  1. Brown the sausage with onions in a skillet for about 7-8 minutes.
  2. Add garlic and cook for an additional 30 seconds before transferring to the Crockpot.
  3. Add carrots, celery, canned tomatoes, and chicken broth to the Crockpot.
  4. Cook on high for about 4-5 hours or low for 7-8 hours.
  5. About 30 minutes before serving, stir in tortellini, cream (if using), and spinach.
