  • 1 yellow onion
  • 2 cloves garlic
  • 24 oz low sodium chicken broth
  • 2 cans great Northern beans
  • 2 cans diced green chiles
  • 1 can whole kernel corn
  • Spices: salt
  • black pepper
  • cumin
  • oregano
  • chili powder
  • cayenne pepper
  • 4 oz reduced fat cream cheese
  • 1/4 cup half-and-half

Instructions

  1. In a slow cooker, layer the chicken breasts and season with salt, pepper, cumin, oregano, chili powder, and cayenne.
  2. Add diced onion, minced garlic, beans, green chiles, corn, broth, and chopped cilantro; stir well.
  3. Cover and cook on LOW for 8 hours or HIGH for 3–4 hours until chicken is cooked through.
  4. Shred the chicken in a bowl using two forks; return to the slow cooker.
  5. Mix in softened cream cheese and half-and-half; cook on HIGH for an additional 15 minutes until creamy.
