  4. Pour in chicken broth and scrape the bottom of the pan.
  5. Lower heat and add heavy cream, cream cheese, and Parmesan; stir until smooth (3-4 minutes).
  6. Cook gnocchi according to package instructions until they float.
  7. Add cooked gnocchi to the skillet along with spinach and sun-dried tomatoes; stir until spinach wilts.
  8. Garnish with fresh parsley before serving.
