  • 4 strips bacon
  • 1/2 medium onion (chopped)
  • 3 sticks celery (chopped)
  • 2 medium carrots (peeled and chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 cups sweet corn (fresh or frozen)
  • 2 large Russet potatoes (peeled and diced)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, cook the bacon until crispy, about 10 minutes. Remove and set aside on paper towels.
  2. Retain about 2 tablespoons of bacon fat in the pot; sauté the onion, celery, and carrots for 5 minutes until softened.
  3. Add minced garlic; cook for another 30 seconds. Stir in flour, cooking for one minute while stirring constantly.
  4. Pour in chicken broth, stirring well to dissolve flour; scrape any brown bits from the pot.
  5. Mix in heavy cream, corn, diced potatoes, Italian seasoning, cayenne pepper (if using), and most of the cooked bacon.
  6. Bring mixture to a boil over high heat; then reduce to a rapid simmer while covering slightly ajar. Cook until potatoes are tender (about 15-20 minutes).
  7. Season with salt and pepper to taste before serving hot, garnished with remaining bacon.
