  • 1 large yellow onion (diced)
  • 1 celery rib (diced)
  • 2 lbs carrots (peeled and sliced)
  • 2 garlic cloves (minced)
  • 4 cups chicken stock
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Sea salt and black pepper to taste

Instructions

  1. In a large pot, brown the bacon over medium heat; then remove using a slotted spoon.
  2. In the same pot, sauté onion, celery, and carrots for 6-8 minutes until softened. Add garlic, salt, and pepper; cook for another minute.
  3. Pour in chicken stock and simmer for 20-25 minutes until carrots are tender.
  4. Blend the soup until smooth with an immersion blender or in batches using a regular blender.
  5. Stir in milk and heavy cream; season further if needed.
