  • 4 slices bacon (chopped)
  • 2 packages kielbasa sausage (12 ounces each, sliced)
  • 1.5 pounds ground beef (80/20)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 can petite diced tomatoes (14.5 ounces)
  • 2 cans baked beans (16 ounces each)
  • 1 can chopped green chilies (7 ounces)
  • 1 can sweet corn (15 ounces)
  • 2 medium russet potatoes (peeled and cubed)
  • 1 cup water
  • 2 tablespoons parsley (chopped)

Instructions

  1. In a large pot, cook the chopped bacon until crispy. Use a slotted spoon to remove and drain on paper towels.
  2. Brown the sausage in the same pot until golden. Remove and set aside with the bacon.
  3. Add ground beef, onion, and garlic to the pot; cook until beef is browned.
  4. Stir in flour, salt, pepper, and chili powder; cook for an additional minute.
  5. Add diced tomatoes, baked beans, corn, potatoes, bacon, sausage, and water; bring to a boil.
  6. Reduce heat and simmer covered for one hour, stirring occasionally.
  7. Garnish with parsley before serving.
