  • 4 tbsp Unsalted Butter (cold, cut into cubes)
  • 1/3 cup + 1 tbsp Brown sugar
  • 2/3 cup All-purpose flour
  • 1/8 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 cup Unsalted butter (softened)
  • 1 cup White granulated sugar
  • 1/3 cup Light brown sugar
  • 1 Large egg (room temperature)
  • 1 Large Egg yolk (room temperature)
  • 1 tsp Vanilla extract
  • 2 3/4 cup + 2 tbsp All-purpose flour (sifted)
  • 1 tsp Baking soda
  • 3/4 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 1/2 cup Powdered sugar (sifted)
  • 1 tbsp Whole milk
  • 1/4 tsp Vanilla extract

Instructions

  1. Prepare the streusel topping by mixing cold butter, brown sugar, flour, salt, and cinnamon in a bowl until crumbly. Set aside.
  2. For the cookie dough, cream softened unsalted butter with both sugars until fluffy. Add egg and vanilla; mix well.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually combine this dry mixture with the wet ingredients.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Drop dough onto the sheet and top each cookie with streusel.
  5. Bake for 12-15 minutes until edges are golden. Cool slightly before drizzling with icing made from powdered sugar, milk, and vanilla.
